- Zest of half a lemon

- half teaspoon Honey
- 3.5 ounces Sundried tomatoes, chopped.
- 3 Scallions, chopped.
- Small handful of Cilantro, chopped.
- Small handful of arugula to serve
- Salt & fresh ground Pepper to taste.
