Ingredients
- 2 medium zucchini, shredded
- 1 cup onion, diced
- 2 garlic cloves
- 10 teaspoons basil leaves, finely chopped
- 1/2 teaspoon oregano
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 tomato, chopped
- 15 kalamata olives, sliced
- 1-2 cups mozzarella cheese, shredded
- 6-8 flour tortillas (Mission organic)
- 2-3 tablespoons olive oil (divided)
- Garnishes: salsa, cheese dip, sour cream
