- 4 boneless skinless chicken breasts, pounded ½" thick (5 if they're small)

- ¼ cup red wine
- ½ medium onion, chopped (1 cup)
- 1 sweet red cubanelle pepper, diced into ½" pieces (1 cup)
- 1 tsp. oregano
- ½ tsp. italian seasoning
- ¼ tsp. garlic powder
- 1 (28 oz.) can whole peeled plum tomatoes such as Hunt's, break up tomatoes
- 1 (15 oz.) can tomato sauce
- ¼ cup tomato paste (about 2 oz.)
- 1½ tsp. dried oregano
- 1½ tsp. chili powder
- 1 tsp. garlic powder
- ½ tsp. dried italian seasoning
- ½ tsp. cumin
- ½ tsp. paprika
- ½ tsp. onion powder
- ¼ tsp. chipotle chili powder
- ¼ tsp. white pepper
- 1 whole dried red chile pepper (6" long), snipped into ¼" pieces (with the dried seeds)
- 8 oz. (as desired) whole spicy pepperoni, sliced then cut into matchsticks
- 1 (16 oz.) bag shredded mozzarella and provolone cheese blend such as Sargento's
- dried parsley
