  • 1 jalapeno, seeded and chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon herbes de Provence
  • 1 bay leaf
  • 4 cups water
  • 1/4 cup cornstarch (or arrowroot) dissolved in 1/4 cup water
  • 1 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 1 pound lump crab meat
  • 2 tablespoons Cognac
