- 1/2 cup green olives, pitted or not (with or without the red pimento)

- 1 green bell pepper, seeded and cut into ¼-inch strips
- 3 cloves garlic, minced
- 1 1/2 cups short-grain white rice (like Italian Arborio or Spanish Bomba)
- 2 teaspoons smoked paprika
- 1 teaspoon turmeric
- 1 pinch cayenne pepper
- 1/3 cup dry (fino) sherry
- 1 cup chopped fresh tomatoes, or equivalent canned
- 1/2 cup frozen peas, thawed
