- 1 pound turkey livers (see Note)
- Kosher salt and pepper to taste
- 1/2 cup olive oil.
- 1/2 cup bourbon
- 1 tablespoon chopped thyme
- 1/2 tablespoon chopped rosemary
- 1/2 pound fresh water chestnuts, peeled then sliced into 1/8 -inch coins (see Note)
- 1/2 pound thinly sliced pancetta or bacon
- 1/2 cup ruby port
- 1/4 cup balsamic vinegar
- 1 star anise pod
- 1 teaspoon Sichuan peppercorns
- Pinch chile flakes
- 1/4 cup soy sauce, to taste
