- gingili oil/nallennai - 1 tablespoon
- mustard seeds/rai/kadugu - 1/2 teaspoon
- cumin seeds/jeera - 1/2 teaspoon
- onion - 1 medium chopped
- garlic - 2-3 cloved finely chopped
- tomato - 1 chopped
- eggplant - 1 large chopped into 1/3 - 1/2 inch cubes
- tamarind paste - 1 teaspoon (optional)
- garam masala - 1 heap teaspoon (can substitute with sambar powder/podi)
- turmeric - 1/4 teaspoon
- red-chili powder - 1/2 - 1 teaspoon
- salt to taste
- roasted cashew nuts - 1/2 - 3/4 cup halved
