- 3/4 cup red lentils
- 1 8 oz can diced tomatoes, with juice
- 1 teaspoon cumin
- 1/2 teaspoon coriander
- 1/2 teaspoon turmeric
- 6 cups chicken broth
- 1/3 cup cilantro, chopped
- 1/3 cup cashews, chopped for garnish
