- 1 (5-pound) bone-in fresh pork shoulder half (preferably arm picnic)
- 1 (16-ounce) bottle no-sugar-added Italian dressing (recommended: Paul Newmans Olive oil and Vinegar)
- 2 limes, juiced
- 2 tablespoons chopped fresh cilantro leaves
- 1 tablespoon kosher salt
