Ingredients
- 1 ham hock
- 1 rack of pork spare ribs
- 1 lb slab bacon, chopped
- 1 lb small red beans
- 1/2 lb black beans
- 1/2 lb small white beans
- 4-6 anchos (dried poblano peppers), stems and seeds removed
- 1 bottle ale or lager
- 3 onions, chopped
- 1 large carrot, chopped
- 1 large green pepper, chopped
- 1 14 oz. can whole peeled tomatoes
- 1 small can tomato paste
- 1 head garlic, minced
- 1-2 lbs butternut squash, seeds reserved and chopped to 1 inch cubes
- 2 scallions, chopped
- 2 tablespoons fine cornmeal
- 4 tablespoons brown sugar
- couple pinches of oregano and thyme
- chili powder to taste
- cayenne pepper to taste
- cumin to taste
- salt and black pepper to taste
- vegetable oil
