Basil Scented Red Lentil Risotto
Ingredients
- 1 tablespoon olive oil
- 4 tablespoons butter, divided
- 1 small leek, white part only, finely diced
- 1 cup arborio rice
- 1/2 cup dry white wine
- 3 to 4 cups warm chicken broth (I think vegetable would work here also)
- 3/4 cup dry red lentils
- 1/2 cup finely grated Parmesan
- 4 to 6 large basil leaves, thinly sliced
- Salt for seasoning if necessary
