- 1 tablespoon coriander seeds or ground coriander
- 16 small Asian shallots (about 8 ounces; 226g), coarsely chopped
- 8 medium cloves garlic (about 1 1/2 ounces; 40g), peeled and smashed
- 1/2 teaspoon Diamond Crystal kosher salt; for table salt, use half as much by volume
- 1 teaspoon ground white pepper
- 1/3 cup (80ml) vegetable oil
