Mushroom Risotto
Ingredients
- 5 to 6 cups chicken stock (use vegetable stock for vegetarian option)
- 2 tablespoons butter
- 2 cups flavorful mushrooms (such as shiitake, chanterelle, or oyster), cleaned, trimmed , and cut into 1/2 to 1-inch pieces
- 1/3 cup minced shallot or yellow onion
- 1 3/4 cups risotto rice
- 2/3 cup brandy, vermouth, or dry white wine
- 1/3 cup freshly grated Parmesan cheese
- 1 teaspoon chopped fresh thyme leaves
- Kosher salt and freshly ground black pepper , to taste
- 2 tablespoons fresh parsley or chives
