- 1 ½ pounds salt cod (this will make 1 ½ cups shredded cod)
- 3 cups milk
- 1 large Idaho potato
- Salt
- Freshly ground pepper
- 1 tablespoon finely chopped onion
- 2 cloves garlic, finely chopped
- 2 tablespoons fresh chopped parsley
- 4 large eggs, separated
- 1 tablespoon olive oil
- ½ teaspoon cayenne
- Pinch of ground nutmeg
- 2 cups vegetable or canola oil, for deep-frying
