- 12 ounces (usually 2 bunches) fresh spinach
- 3 tablespoons extra virgin olive oil
- 1 clove garlic, thinly sliced
- splashes white wine
- 8 ounces feta cheese, crumbled
- 1/4 cup grated parmesan
- 2 sprigs each oregano, basil, parsely- chopped
- 1 tablespoon fresh lemon juice
- 1 egg, beaten
- to taste salt & pepper
