Ham and Cheese Muffins
Ingredients
- 1/3 cup white whole wheat flour (or your favorite gluten-free multi-purpose flour)
- 1 1/2 teaspoons baking powder
- 1 cup plain cottage cheese
- 3 ounces sharp cheddar cheese, grated (about 1 cup)
- 1 cup almond meal or finely ground almonds
- 1/2 cup ham, diced (about 1/2 cup)
- 5 eggs
- 1/3 cup water
- 3/4 teaspoon salt
- 2 tablespoons minced fresh chives, plus more for finishing
