Just Spicy Enough Black Bean and Yam Chili
Ingredients
- 5 cups dry black beans, soaked and then cooked until tender
- 1 large red onion, chopped
- 1 large yam (approximately 3.5 c) cut into half-inch cubes
- 1 large red bell pepper, chopped
- 2 large jalapenos, minced
- 3 cloves of garlic, minced
- 6 cups vegetable stock
- 30 ounces fire roasted diced tomatoes
- 8 ounces dark ale (a coffee porter or stout would do nicely)
- 2 teaspoons cumin
- 2 teaspoons cayenne pepper
- 1 tablespoon chipotle powder
- 1 tablespoon ancho chili powder
- salt to taste
