- 1 can chickpeas, rinsed and drained
- 2 stalks celery, finely chopped
- 1 carrot, finely chopped
- 2 large scallions, thinly sliced
- 4 Lacinto kale leaves, de-ribbed and chopped
- 1/2 of a small green apple, peeled and diced
- 1 med garlic clove, minced
- 2 Tbs raw sunflower seeds
- black pepper
- sea salt
- 1 Tbs extra-virgin olive oil
- 2 Tbs Dijon mustard
- juice and zest of 1/2 a large lemon
- hot sauce
- 3 Tbs healthy mayonnaise (can be vegan mayo… I used Sir Kensington’s)
