- 4 medium, firm green tomatoes
- ½ cup shelled pistachios
- 1 ½ cups panko bread crumbs
- 2 tsps garlic powder
- 1 tsp onion powder
- ½ tsp cayenne
- ½ tsp black pepper
- ½ tsp salt
- ¾ cup buttermilk
- Canola or olive oil
- 1 tbsp butter
- 2 tbsps chopped herbs (I used chives, parsley & mint)
- 1 cup low-moisture shredded mozzarella*
