Vegetarian Syrian Style Stuffed Carrots Mehshi Jazzar
Ingredients
- For the stuffing
- 1 cup Brown Rice
- 1 medium onion chopped
- 2 cloves garlic chopped
- 1/8 cup parsely chopped
- 1/8 cup mint chopped
- 1/8 cup dill chopped
- 1/2 teaspoon allspice
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cumin
- 1 tablespoon scant kosher salt
- 1 1/2 cups water
- 20 4 inch pieces of thick carrots peeled
- 2 tablespoons olive oil
- For the Sauce
- 1-2 Sweet potatoes sliced 1/2 inch thick
- 1 8 oz. can tomato sauce
- 2 cups water
- 4 tablespoons tamarind sauce or prune butter
- Juice of 1 lemon
- 12 dried apricots sliced
- 2 tablespoons chopped mint
- 2 tablespoons sugar
