Dinner Tonight: Curried Egg Salad Recipe

Ingredients

• 1/3 cup mayonnaise
• 1 tablespoon fresh lime juice
• 1 1/2 teaspoons curry powder
• 1 teaspoon Dijon mustard
• 1/4 teaspoon salt
• 1/8 teaspoon cayenne
• 6 hard-boiled eggs, shells removed and chopped
• 1 cup diced Granny Smith apple (about 1 apple)
• 1/3 cup red onion, diced
• 1/4 cup cilantro, chopped
• 8 slices of bread
