- 1/4 teaspoon black pepper
- *** TO COOK AND FINISH:
- 1 teaspoon unsalted butter + 1 tbsp of olive oil
- 2 cloves of garlic, smashed
- Whole grain mustard
- Shallots, sliced paper-thin
- SWEET POTATO AND BROWNED BUTTER ROLLS:
- 4 tablespoons (57 grams) of unsalted butter
- 3/4 cup whole milk
- 1 1/8 teaspoons instant dry yeast
- 1/4 cup (50 grams) of cooked sweet potato, finely mashed with a fork
- 2 1/4 cups bread flour, or all purpose
- 2 tablespoons granulated sugar
- 3/4 teaspoon salt
- 1 egg wash (1 large egg + 1 tbsp of water)
