Ingredients
- 85g flour (all-purpose; whole wheat would work, too ... and, perhaps, non-wheat flours)
- 1/2 cup "milk" (almond is good, as is coconut and soy, flavored or not)
- 2 tsp oil (I use olive, but canola is good, too)
- 2 tsp maple syrup (you could use agave or sugar, or, for a non-vegan option, honey)
- 1/2 tsp vanilla extract
- 1/4 tsp (or more!) cinnamon
- 1/2 tsp baking powder (or: 1/4 tsp baking soda and a splash of vinegar, e.g. apple cider)
- Optional (but recommended!):
- ~ 1/2 cup blueberries or similar (not calculated in the recipe's nutritional information, but shown in the photograph)
