- 1 teaspoon potato starch (or cornstarch)

- For the peanut sauce:
- 1/2 cup peanut butter
- 1/3 cup apple juice
- 2 cloves garlic, minced or grated
- 2 tablespoons soy sauce
- 1 tablespoon toasted sesame oil
- For the cold wonton bowls:
- 1/4 cup chili oil
- 1/4 cup balsamic vinegar (or Chinese black vinegar)
- 1 tablespoon toasted sesame oil
- 1/4 cup peanuts, chopped
- 1/4 cup green onions, sliced
- 2 teaspoons sichuan peppercorns, toasted and ground
