Salmon Rillette Recipe
Ingredients
- 1 pound salmon fillet, skin and pin bones removed
- 2 tablespoons Pernod
- 3 1/2 teaspoons salt, divided
- 1 teaspoon pepper, divided
- 1 cup unsalted butter, at room temperature, divided
- 1/2 cup minced shallots
- 1 tablespoon creme fraiche
- 1/2 pound smoked salmon, diced
- 2 1/2 tablespoons lemon juice
- 1 tablespoon extra-virgin olive oil
- 2 egg yolks, lightly beaten
- 1/4 cup minced chives
- Gaguette, for serving
