Ingredients
- 1 lb chicken breast, cut into small strips
- 2 cloves finely crushed garlic
- 1½ tsp cumin powder
- ¼-1/2 tsp cayenne powder
- 1 tsp freshly crushed pepper
- The juice from 1 lime
- salt
- 3 tbsp olive oil
- 1 red onion, sliced
- 1 green bell pepper, de-seeded and sliced
- 1 cup chopped cilantro leaves
- ½ yellow onion chopped
- ½ or 1 serrano/jalapeno pepper (based on how spicy you want to make this)
- 2 roma tomatoes chopped
- 1 cup cooked and drained black beans
- ¾ cup cooked corn
- ½ green bell pepper chopped (optional)
- 1 tsp chopped garlic (fine)
- ½ cup chopped cilantro
- Juice from 1 lime.
