- 2 inches of fresh ginger root
- 6-8 fresh makrut lime leaves (optional)
- 1 tablespoon fish sauce
- 1/2 tablespoon white sugar
- 1/3 cup neutral oil (canola or grapeseed)
- 3 tablespoons Thai curry paste (yellow recommended)
- 1/2 teaspoon ground turmeric
- 1/3 cup flour, plus more for work surface
- 1 onion, peeled and chopped
- 1 cup carrots, peeled and cubed
- 1 cup potatoes, peeled and cubed
- 1 1/2 pounds shredded rotisserie chicken
- 1 cup frozen peas
- 1/2 package frozen puff pastry sheets, thawed (17.3-ounces)
- 1 egg, beaten for egg wash
