- 3/4 pound shrimp—shelled, deveined and cut into 1/2-inch pieces
- 1 small red bell pepper, cut into 1/4-inch dice
- 1 small green bell pepper, cut into 1/4-inch dice
- 1/4 cup finely diced water chestnuts
- 1 jalapeño chile, minced (with seeds)
- 3 tablespoons crisp shallots
- 12 iceberg lettuce leaves
