Paella Vegetariana
Ingredients
- 2 tablespoons olive oil
- 1 bay leaf
- 1 small onion, diced into 1/2-inch pieces
- 2 cloves garlic, minced
- 1 medium carrot, diced into 1/2-inch pieces
- 1 rib of celery, diced into 1/2-inch pieces
- 1 medium red bell pepper, diced into 1/2-inch pieces
- 1 cup short grain brown rice
- 6 saffron threads
- 1 tablespoon tomato paste
- 2 1/2 cups water or vegetable stock
- sea salt
- freshly ground black pepper
- 1 cup peas (fresh or frozen, defrosted)
- 2 cups cooked garbanzo beans (one 15-ounce can, drained)
- 1/2 cup meaty green olives, pitted and halved (Spanish manzanillas or Italian cerignolas work well)
- 1 tablespoon fresh, chopped parsely
- 4 lemon wedges
