- 1 medium to large Romanesco
- 4 tablespoons olive oil
- 1 large leek, white part only, thinly sliced
- 2 small (or 1 large) zucchinis, peeled and cut into 1-inch cubes
- 2 medium (any kind) potatoes, peeled and cut into 1-inch cubes
- 4 cups homemade chicken or vegetable stock (low-sodium store bought works too)
- 1 cup pea shoots (optional) + more for serving
- 3 tablespoons butter
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup whole milk
- salt + pepper
