Ingredients
- 1 4-pound chicken
- 1 large onion, unpeeled, washed

- 1 turnip, cubed into 1/2-inch pieces
- 1 parsnip, sliced up in 1/2-inch semi-circles
- 4 medium carrots, peeled and cut into 3-inch pieces
- Juice of 1 lemon
- 2 tablespoons salt, plus more to taste
- 2 potatoes, cubed into 1 inch pieces
- 1/2 cup matzo meal
- 2 large eggs room temperature, lightly beaten
- 2 tablespoons vegetable oil or schmaltz
- 2 tablespoons seltzer water
- 1 teaspoon salt
- 1/2 teaspoon white pepper
- 1 teaspoons finely chopped fresh dill
