- 2 cups all-purpose flour

- 1 1/4 cups (2 1/2 sticks) unsalted butter, very cold, cut into 1/2-inch pieces
- 6 to 8 tablespoons ice water
- 1 egg yolk, for brushing and sealing
- 1 teaspoon water or milk
- 4-6 ounces brie
