  • Salt and pepper for seasoning the cauliflower
  • 6 whole cloves garlic, skins left on
  • 1 medium leek, cleaned and diced
  • 2 tablespoons butter
  • 6 cups chicken or vegetable broth
  • 1/2 cup half and half
  • 2 cups cups shredded cheese ( I used 1 1/2 cups Kasseri and 1/2 cup Parmesan but use whatever you like....Fontina, Jack Cheddar etc.)
