- 1 pound andouille sausage or kielbasa, sliced into rings
- 1 pound boneless, skinless chicken thighs, large diced
- 2 tablespoons Cajun Seasoning, plus more for sprinkling, recipe follows
- 1 cup small diced celery
- 1 cup small diced green bell pepper
- 1 1/2 cups small diced yellow onion
- 3 cloves garlic, sliced
- 5 cups chicken broth
- 2 fresh bay leaves
- Kosher salt and freshly ground black pepper
- 1 pound shrimp, cleaned and tails removed
- 2 cups sliced fresh or frozen okra
- 1/2 cup finely sliced scallions
- 1/2 cup finely chopped fresh parsley
- Cooked white rice, Louisiana hot sauce and file powder, for serving
- 2 1/2 tablespoons paprika
- 2 tablespoons garlic powder
- 1 tablespoon dried oregano
- 1 tablespoon freshly ground black pepper
- 1 tablespoon onion powder
- 1 tablespoon dried thyme
- 2 teaspoons kosher salt
- 1 teaspoon cayenne pepper
