- 3 sprigs fresh thyme
- 1 1/2 cup risotto rice
- 3 tbsp mascarpone
- 1 1/2 tbsp chopped fresh parsley
- 1/2 cup grated pecorino cheese
- Extra parsley leaves (for garnish)
