- 1/2 cup shaved almonds
- 2 lb (900g) boneless skinless chicken breasts , cut into cubes
- 1-2 bell peppers , cut into chunks
- 1-2 zucchinis , sliced
- 2-3 red onions , quartered
- For the dip:
- 1 tablespoon extra virgin olive oil
- 3/4 cup minced red onion
- 4 cloves garlic , about 1 teaspoon, crushed
- 1 teaspoon cumin
- 1/2 teaspoon cardamom
- 1 teaspoon cinnamon
- 1/2 teaspoon sea salt
- 1/8 teaspoon cayenne pepper
- 2 teaspoons sugar
- 2 tablespoons tahini (optional)
- 1 cup Greek yogurt
