Grape And Almond Winter Salad
Ingredients
- 1 tbs lemon juice
- ½ tsp Dijon mustard
- 1½ tbs extra virgin olive oil
- ¼ tsp ground cumin
- sea salt and pepper to taste
- ½ cup freekeh
- 2 cups water
- ½ cup red seedless grapes, halved
- 3 spring onions, finely chopped
- ½ medium lebanese cucumber, sliced on diagonal and halved
- ½ cup radish leaves or rocket (arugala)
- ¼ mint leaves
- 2 tbs toasted flaked almonds
- salt and pepper
