- Risotto
- 1 cup Carnaroli Rice
- 1 medium gold onion chopped very finely
- 1/4 cup white wine
- 5 tablespoons Extra Virgin Olive Oil
- 1 Radicchio, washed and cut into strips
- salt
- 2 tablespoons butter, soft and cut in small pieces
- 3 tablespoons grated Parmesan cheese
- 3 tablespoons Gorgonzola
