- 1 whole plump head of garlic, cloves peeled and chopped
- 1 medium onion, chopped
- 4 plump shallots, chopped
- 1 tablespoon unbleached all-purpose flour
- Salt and freshly ground pepper
- 3 large egg yolks
- About 1 tablespoon white wine vinegar
- 12 to 16 slices of a baguette, toasted
- 3 tablespoons finely snipped chives
