Ingredients
- a small handful of fresh dill roughly chopped
- 2 small onions peeled
- 2 smoked or regular sausages cooked the best quality you can afford
- a small handful of fresh flat leaf parsley leaves picked
- 3 large carrots quartered
- 300 g cooked brisket or other leftover cooked meat
- 1 teaspoon good mustard
- 1 kg potatoes scrubbed clean
- a few sprigs of fresh rosemary and thyme leaves picked
- sea salt and freshly ground black pepper
- 1 tablespoon good quality cider vinegar
- 80 g salami skin removed
- For the dressing
- a jar of dill pickles to serve
- 2 thick slices of smoked bacon or 6 rashers of smoked streaky bacon the best quality you can afford
- 3 tablespoons extra virgin olive oil
- 4 quail s eggs
- a small handful of fresh chives finely chopped
