- 12 ounces medium shrimp, peeled and deveined
- 1 1-inch piece fresh ginger, peeled and julienned
- 1/2 large red bell pepper, thinly sliced
- 2 stalks celery, thinly sliced
- 2 scallions, thinly sliced, dark green parts separated
