Ingredients
- 4 -8 tablespoons margarine (Becel Olive Oil type)
- 3 tablespoons all-purpose flour
- 2 cups plain soymilk (Silk coffee milk is best)
- 1 -2 teaspoon kosher salt
- 1 -2 teaspoon fresh ground black pepper
- 1⁄2 teaspoon nutmeg
- 3 tablespoons lemon juice
- 1 egg yolk
- 1 -2 tablespoon Dijon mustard
- 1⁄2 cup cheese, grated (like Parmesan, Asiago, Romano, Gruyere, Swiss or combo)
- 6 large eggs, with unused
- 1 egg white, from sauce above
- 1 pinch kosher salt (as desired)
- 1 pinch fresh ground black pepper
- 1 baguette, cut into 8 pieces (or 8 slices of any type of toasted bread)
- 8 slices prosciutto, sliced but not paper thin
- 2 tablespoons fresh basil leaves, chopped
