- 2 pounds boneless, skinless chicken thighs
- 3 cups crumbled Ritz crackers (about 3 small sleeves)
- 1 tablespoon freshly cracked black pepper
- 1 tablespoon paprika
- 1 tablespoon dried basil
- 1 teaspoon celery salt
- 1 teaspoon ground cumin 1/2 teaspoon ground white pepper
- 3/4 teaspoon cayenne pepper
- 2 cups crumbled blue cheese Canola oil, for frying 1 egg
- 1/4 pound (1 stick) unsalted butter
- 1 garlic clove, minced
- 1 tablespoon minced pickled
- 1 celery head, cut into matchsticks
- 1 1/2 cups hot sauce (I recommend Crystal)
