- * 1-2 pound fresh andouille sausage, sliced into
- 1/4" thick round
- * 2 tablespoon olive oil
- * 4 cup yellow onion, chopped
- * 3 cup celery, chopped
- * 1 cup green bell pepper, chopped
- * 1/2 cup red bell pepper, chopped
- * 1/2 cup yellow bell pepper, chopped
- * 2 bay leaf
- * 1 tablespoon garlic, minced
- * 4 teaspoon salt
- * 1/4 teaspoon dried thyme
- * 1/2 teaspoon black pepper
- * 1/4 teaspoon white pepper
- * 1/4 teaspoon cayenne pepper
- * 3 tablespoon gumbo file powder
- * 12 cup chicken stock
- * 1 whole chicken, (see my first note)
- * 4 tablespoon creole seasoning
- * 3 cup all purpose flour (see my second note)
- * 4 cup vegetable oil
- * 4 cup cooked rice
