Ingredients
- 1. 1 pound Grass Roots chicken thighs (skin on or off)
- 2. 12 guajillo chiles, stemmed
- 3. 2 large cloves of garlic, peeled
- 4. 1/2 medium onion, chopped
- 5. 1 cup hot water
- 6. 2 tablespoons apple cider vinegar
- 7. 1 tablespoon cane sugar
- 8. 1 tablespoon salt
- 9. 1 tablespoon high-heat oil (I use avocado)
- 10. canola or avocado oil for grill
- 11. 8 tortilla shells (I used whole wheat but any kind works!)
- 12. 2 avocados, chopped with a squeeze of lime added
- 13. cilantro
- 14. lime wedges for serving
