- 1 cup fine bulgur
- 1 cup chopped fresh mint
- 1-1/2 cups chopped curly-leaf parsley
- 1 cup, (about 1 bunch green onions, coarsely chopped)
- 4 or 5 Roma tomatoes, cut into 1/2-inch dice
- 2 medium cucumbers, peeled, seeded and cut into 1/2-inch dice
- 1/2 cup extra-virgin olive oil
- 1/2 cup fresh squeezed lemon juice
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
