Ingredients
- 1 large onion, coarsely chopped
- 1⁄2 cup extra virgin greek olive oil, plus more for brushing
- 8 -10 scallions, coarsely chopped
- 1 1⁄2 lbs leaves spinach (not baby)
- 1 cup loosely packed fresh dill, fronds and tender stems coarsely chopped
- 1⁄4 teaspoon kosher salt
- 1⁄4 teaspoon ground black pepper
- 3⁄4-1 lb greek feta, coarsely chopped
- 4 large eggs, beaten
- 1 (1 lb) box phyllo dough (extra thick and not frozen if possible)
