Ingredients
- * 1 tb olive oil
- * 1 onion
- * 3 clove garlic, crushed
- * 1 red capsicum diced into piece
- * 2 carrot, diced into cube
- * 1 400ml can diced tomato
- * 1 medium potato diced into cube
- * 1 can borlotti bean, drained and rinsed
- * 6 cup of water or stock
- * chunk of vegan parmesan (optional) (i use vegusto piquant)
- * 1/4 tsp liquid smoke (optional)
- * salt to taste
- * 1 cup of chopped kale
- * 2 handful of small pasta
- * freshly chopped parsley or basil
- * grated vegan parmesan to serve
