- 5 Tablespoons coconut flour
- 1/4 cup granulated monk fruit sweetener , or granulated stevia
- 1 teaspoon cinnamon
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon fine sea salt
- 2 large eggs
- 1 cup orange juice, (fresh is best)
- 2 Tablespoons orange zest,, lightly packed
- 1 cup shredded carrots
