Homemade Lamb Sausages with Rosemary Sun Dried Tomatoes and Feta
Ingredients
- 1 pound ground lamb
- 1 tablespoon (heaping) freshly minced rosemary, needles only, no stems (stems can puncture the plastic bag when forming the sausage)
- 1 teaspoon (heaping) minced or pressed garlic
- 1 tablespoon minced parsely
- 1/2 teaspoon dried thyme flakes, crushed
- 4 sun-dried tomato halves, soaked in hot water until plump, drained and chopped
- Zest from 1/2 lemon
- 2-3 tablespoons Feta cheese crumbles
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 tablespoon water
- (Optional) pinch or two dried, red pepper flakes
